blueberry bliss....

Call me crazy.......but this is what we had for dinner on Tuesday night.





If you know me.....then you know that i am a fly by the seat of my pants sorta girl.....and i normally never tell ya what i'm eating.....

or cooking for that matter...

because i don't cook....

but trust me on this one.....

i don't make weekly menu's even though i love reading my new friend Erin's....

and i recently just shouted out on Facebook the other day for someone to please send me some

crock pot recipe's ........



i need easy.....

because the kids are screaming at me....

no.more.mac n cheese.please

{duh}....like i'm gonna listen.....

boil water

open box

dump in mac

drain

open Velveeta packet

dinner has never been easier!


i know...don't roll your eye's at me...

but it's so easy.....

even though i don't cook a whole lot....

i do love to bake....

and this is what we made....

it's a Kasey classic for the fall...

blueberry pumpkin bread.

We also watch Biggest Loser.....

how appropriate....

eating bread while we watch these people.

the more they lose....the more we stuff our faces...


sheesh.







on to some other little news......

i did it....

i nominated my little lola for the national Gap casting call.

yes...

i did.

you can enter your child to...it was easy.....

and who knows....if our kids win...then ...

just think......

they could support us....

i might even be able to quit my day job....
errrr....
well....taking care of her is my day job.....
but maybe my day job could have some perks....
hmmm.....

even...possibly...bake a bit more....

well......maybe that's asking a bit much.

Here is the blueberry pumpkin bread recipe:

3 c. sugar

1 c. vege oil

3 L. eggs

1- 16 ounce can pumpkin

3 c. all purpose flour

1. tsp ground cloves

1. tsp. ground cinnamon

1. tsp. ground nutmeg

1. tsp. baking soda

1/2 tsp. salt

1/2 tsp. baking powder

*preheat oven to 350*. Butter two 9x5x3-inch loaf pans. Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt, and baking powder into large bowl. Stir into pumpkin mixture. Then add an many blueberries as your heart desires.....
or about 1/2 cup to each loaf....

Voila!

Bake away.....

my recipe says an hour...but it normally is around 45 minutes....

you don't want it to dry.....we like it a little moist.
and yes...there is LOTS of WHITE FLOUR and SUGAR.....
so if you are on one of those...
i.don't.eat. white flour.and . sugar
then....
good news...you don't have to try it.....
but i do....
and i top it off with a glass of the finest red wine.

I am now feeling quite deprived of all things fall after reading a bunch of blogs with great fall colors and activities. It is still summer here and it will be through December. Love the picture of your girl. She is sure to win.

I go with the red wine... but that's all. I don't bake - duuhhh, tomorrow I will. I have to. It's my birthday. So a cake. Visitors want a cake. I don't like bought ones. OK. I bake. Twice a year. Me and my son's birthday. Or maybe triple. my man's birthday. But he's not into cakes much. Thank goodness! Love your photo's!!!

Sounds SOOOOO....good, especially with the glass of wine! I ate a piece of my birthday cake and a Corona Light for dinner last week, and I didn't feel a bit guilty about it!

I make a mean pumpkin bread but I never thought to add blueberries. Sounds delicious, going to have to try this! I entered Amelia in this too. I will pop on there later and vote for miss Lola. I could just see her in a GAP ad! As for my fall favorite, pumpkin pancakes! yummy.

That sounds sooo good! I'm gonna have to make that even tho I suck so bad at baking. A gourmet meal, I can do, but baking usually equals disaster.
Lola is darling, if she doesn't win it would be a miscarriage of justice!

I LOL at the Biggest Loser comment....I totally do that too....watch diet shows AND eat at the same time, usually it's cookies with me....I think I subsconsciously think that their weight loss applies to me too .....somehow....

I make a pumpkin bread similar to yours and I put anything from craisins to white chocolate to banana chips in it... so tasty and I've never had a bad version!

Good luck on the casting call! She is gorgeous, I can totally see her in a Gap ad!
By the way, google for a blog called 365 days of crockpot cooking something to that effect, she cooked every single day for a year in her crock pot, surely there are enough ideas on her blog to get some insight and creativity! :)
I am more of the spaghetti monster, I make that quite often, especially during back to school time when we are figuring out our schedule, it is just too easy!
Trying to remember how to cook meat and make a VARIETY of meals! :)

Mmm, sounds yummy!

My fave fall classic is simple, so you'll probably appreciate it. Oatmeal raisin cookies - made with a pouch of Betty Crocker Oatmeal cookie mix! I mix it according to the directions, and add 1 tsp. of cinnamon, 1 tsp. of vanilla and mix in some raisins. Super easy and yummier than any from-scratch version I've made!

Umm, I love all things blueberry and all things pumpkin. They are my two favorite things and I would never have thought of mixing the two together!! (I also am obsessed with blue cheese but we'll leave that out of this mix) Sweet tasty goodness!! Lola - I think you just rocked my world!

Love Lola but what no Finn??? Gap would be nutz to turn down either face!!!
I had to laugh I watched BL with a bowl of ice cream & felt guilty until the salty caramel reminded how good it was.
Im definitely trying the recipe. My fav is my Autumn Harvest soup...pumpkin, butternut, late season red, yellow peppers, cream, butter , stock and whoosh blended to perfection.
Man that sounds good....

Looks great. Will try this recipe soon. Since you said you needed crock pot recipes. Heres an easy one ( with veggies!) You will need-
a roast,a bag of precut baby carrots, and cut potatoes in 6 pieces. I family size can of cream of mushroom. DUMP it all in your crock pot on high for 6 hrs. Easy and even the kid's cant resist veggies smothered in cream of mushroom! Not your gourmet meal but hearty and home cooked, enough to please the hubby and the kids!
